Questions

Will this cook or kill my starter?
No. The range caps at 110°F and the probe governs the heat from inside the culture, which is what prevents overheating in the first place.

How is this different from a $20 warming mat?
A mat heats the bottom of the glass at one fixed output all night, because nothing tells it when to stop. It can cook the bottom layer of your starter while the top of the jar sits in cold air. The probe reads the culture itself and tells the base when to stop.

I already use the oven with the light on. Why pay for this?
The oven light has no thermostat in it. Depending on your bulb it either does almost nothing or runs hot: one baker measured his oven with just the light on at around 85°F, which dried the surface of his starter out inside twelve hours. You also cannot tell which is happening to you, because there is no number involved. And it heats an entire oven cavity all night to warm one jar.

My kitchen is warm in summer. Why would I need this?
Consistency, not heat. A summer kitchen can swing fifteen degrees between noon and three in the morning. The probe holds one number all day.

Does it fit my jar?
The base is flat and jar-agnostic. Quart jars, crocks and bannetons all sit directly on it. If you want a jar with a lid the probe actually passes through, that is the one we sell.

Is it just for sourdough?
No. It holds any temperature between 70 and 110°F, so it works for yoghurt, koji and other ferments. The base stores upright in a drawer when you are not using it.

Is it safe to leave on overnight?
Yes. The 24-hour timer and the internal temperature governor are built for unattended overnight holds.
